8 oz Smithfield Virginia or Honey Ham, sliced thin (On Sale: $4.99 lb)
4 slices Cooper Sharp Cheese (On Sale: $5.99 lb)
4 Thomas' English Muffins, split (On Sale: $2.88)
4 large eggs (On Sale: 2/$7)
2 tablespoons butter (On Sale: 2/$5)
1/4 teaspoon salt
1/4 teaspoon black pepper
Step 1: Toast the split English muffins until golden and set them aside.
Step 2: Melt half the butter in a large skillet over medium heat.
Step 3: Add the sliced ham and warm it for 2 minutes per side, until the edges curl and brown.
Step 4: Lay a slice of cheese over each portion of ham and let it melt in the residual heat, then move the stacks to the muffin bottoms.
Step 5: Add the remaining butter to the pan and crack in the eggs.
Step 6: Fry for 3 minutes for a set white and runny yolk, seasoning with the salt and pepper.
Step 7: Slide an egg onto each sandwich, cap with the muffin tops, and serve hot.
Chef's Tip: Lay the cheese on the ham while it is still in the hot skillet so it melts from the residual heat and glues the stack together. Cook the eggs in the same pan you warmed the ham in and they pick up all that salty flavor. If you are feeding a crowd, crack the eggs onto a sheet pan and bake them at four hundred degrees instead of frying one at a time.
