Cheesy Garlic Bread

Italian bread split, painted with garlic butter, and run under the broiler beneath a layer of melting cheese. The thing everyone reaches for first.

Ingredients

  • 1 loaf Schmidt Italian Bread, split lengthwise (On Sale: $2.99)

  • 8 oz Galbani String Cheese, pulled into shreds (On Sale: $2.99)

  • 1/2 cup butter, softened (On Sale: 2/$5)

  • 5 cloves garlic, grated or very finely minced (On Sale: 2/$6)

  • 1/4 cup grated Parmesan cheese (On Sale: $2.99)

  • 2 tablespoons chopped fresh parsley

  • 1/2 teaspoon dried oregano

Directions

Step 1: Heat the oven to 400 degrees and line a sheet pan with foil.

Step 2: Mash the softened butter together with the garlic, Parmesan, oregano, and half the parsley.

Step 3: Spread the garlic butter thickly across both cut halves of the bread.

Step 4: Bake for 8 minutes, until the edges are crisp and the butter has soaked in.

Step 5: Scatter the string cheese evenly over both halves.

Step 6: Broil for 2 minutes, watching constantly, until the cheese is bubbling and spotted brown.

Step 7: Scatter over the remaining parsley, cut into thick fingers, and serve hot.

Chef's Tip: Bake the buttered bread for eight minutes before the cheese goes on, so the inside heats through and the crust firms up rather than going limp under the topping. Grate the garlic on a rasp instead of chopping it and the flavor spreads evenly rather than landing in hot pockets. Watch the broiler the entire time, because it turns from golden to burnt in well under a minute.
