Loaded Potato Wedges

Frozen potatoes roasted hard until the edges shatter, then buried under sharp cheese, bacon, and green onion. A side dish that disappears faster than whatever it came with.

Ingredients

  • 2 bags (19-32 oz each) Ore-Ida Potatoes (On Sale: 2/$7)

  • 6 oz Cooper Sharp Cheese, shredded (On Sale: $5.99 lb)

  • 6 oz Smithfield Original or Thick Cut Bacon, cooked crisp and crumbled (On Sale: $3.99)

  • 3 green onions, sliced thin

  • 2 tablespoons vegetable oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon salt

Directions

Step 1: Set a large sheet pan in the oven and heat it to 450 degrees.

Step 2: Toss the frozen potatoes with the oil, garlic powder, and salt.

Step 3: Carefully spread them across the hot pan in a single layer with space between them.

Step 4: Roast for 20 minutes, turning once at the halfway point, until deeply golden.

Step 5: Scatter the shredded cheese and crumbled bacon over the potatoes.

Step 6: Return the pan to the oven for 4 minutes, just until the cheese melts.

Step 7: Finish with the sliced green onions and serve immediately.

Chef's Tip: Preheat the sheet pan in the oven while it comes up to temperature, then spread the frozen potatoes onto the hot metal so they start crisping immediately. Do not crowd them, because a packed pan steams and you will never get a crisp edge. Add the cheese only in the last four minutes so it melts without turning to leather.

Save by using Catching the frozen potatoes on the two for sale and topping them with deli cheese you already bought for the week and Serve with Sour cream and a shake of hot sauce on the side.
