2 Porterhouse or T-Bone Steaks (about 2 lb total) (On Sale: $8.99 lb)
4 tablespoons butter, softened (On Sale: 2/$5)
3 cloves garlic, minced (On Sale: 2/$6)
1 tablespoon chopped fresh parsley
1 teaspoon chopped fresh thyme
2 teaspoons kosher salt
1 teaspoon coarse black pepper
1 tablespoon olive oil (On Sale: $9.99)
Step 1: Mash the softened butter with the garlic, parsley, and thyme, then roll it into a log in plastic wrap and chill until firm.
Step 2: Take the steaks out of the refrigerator 30 minutes ahead and pat them completely dry.
Step 3: Rub both sides with the olive oil, then season generously with the kosher salt and black pepper.
Step 4: Heat the grill to high and scrub the grates clean.
Step 5: Grill the steaks 5 to 6 minutes per side for medium rare, turning only once.
Step 6: Move them to a cutting board, top each with a thick slice of the herb butter, and tent loosely with foil.
Step 7: Rest for 10 minutes, then slice the strip and tenderloin away from the bone and cut across the grain.
Chef's Tip: Pull the steaks from the refrigerator thirty minutes before grilling so they cook evenly from edge to center. Leave them alone on the grate until they release on their own, because forcing them early tears the crust you are trying to build. Rest the meat a full ten minutes before slicing so the juices settle back in instead of running onto the board.
