Pint blueberries stirred into oats that soak overnight and are ready the moment you open the refrigerator. Five minutes of work for four grab-and-go breakfasts.
1 pint Blueberries (On Sale: 2/$7)
2 cups old-fashioned rolled oats
2 cups milk (On Sale: $5.99)
1 cup plain or vanilla yogurt (On Sale: 4/$5)
3 tablespoons honey or maple syrup (On Sale: $4.99 lb)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Step 1: Stir together the oats, milk, yogurt, honey, vanilla, cinnamon, and salt in a large bowl.
Step 2: Set aside a handful of blueberries for topping and fold the rest into the oats.
Step 3: Mash a spoonful of the berries against the side of the bowl to release their color.
Step 4: Divide the mixture among four jars or covered containers.
Step 5: Refrigerate overnight, or at least 6 hours, until the oats have softened completely.
Step 6: Top each jar with the reserved blueberries just before eating.
Chef's Tip: Use old-fashioned rolled oats rather than quick oats, because quick oats break down overnight and turn pasty. Mash a spoonful of the blueberries into the mixture before it chills and the whole jar takes on their color and flavor. These keep beautifully for four days, so make the full batch on Sunday and breakfast is handled through Thursday.
Save by using Picking up blueberries while they are on sale and freezing a pint for the weeks after and Serve with A drizzle of honey and a spoonful of chopped nuts on top.
