Sweet and Sour Chicken Bites

Crispy breaded chicken bites tossed in a quick sweet and sour glaze and served over rice. Faster than takeout and built around a lunchbox-friendly freezer staple.

Ingredients

  • 2 packages (5.2-5.3 oz each) Tyson Chicken Bites (On Sale: 99¢)

  • 1/3 cup pineapple juice

  • 3 tablespoons ketchup (On Sale: $4.99)

  • 3 tablespoons brown sugar

  • 2 tablespoons rice vinegar

  • 1 tablespoon soy sauce

  • 2 teaspoons cornstarch mixed with 2 teaspoons cold water

  • 1 bell pepper, cut into bite-size pieces

  • 2 green onions, sliced thin

Directions

Step 1: Heat the oven to 425 degrees and bake the chicken bites on a sheet pan according to the package, until deeply crisp.

Step 2: While they bake, whisk together the pineapple juice, ketchup, brown sugar, rice vinegar, and soy sauce in a skillet.

Step 3: Bring the sauce to a simmer over medium heat and add the bell pepper.

Step 4: Cook for 3 minutes, until the pepper softens slightly but keeps its snap.

Step 5: Stir in the cornstarch slurry and cook for 1 minute more, until the sauce turns glossy and coats a spoon.

Step 6: Add the hot chicken bites and toss quickly to coat.

Step 7: Scatter the green onions over top and serve right away over rice.

Chef's Tip: Bake the chicken bites rather than microwaving them so they stay crisp enough to stand up to the sauce. Toss them in the glaze at the very last second, right before serving, or the coating goes soft. The sauce thickens fast once the vinegar reduces, so keep it moving and pull it from the heat while it still coats a spoon loosely.
