Philly-Style Steak and Cheese Sandwiches

Thin-sliced steak griddled with sweet onions and peppers, then folded into Italian bread under melting sharp cheese. A hometown sandwich built from the meat case.

Ingredients

  • 1.25 lb Porterhouse or T-Bone Steaks, boned and sliced paper thin (On Sale: $8.99 lb)

  • 6 slices Cooper Sharp Cheese (On Sale: $5.99 lb)

  • 1 loaf Schmidt Italian Bread, cut into 4 lengths and split (On Sale: $2.99)

  • 2 large onions, sliced thin

  • 2 bell peppers, sliced thin

  • 3 tablespoons vegetable oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

Directions

Step 1: Freeze the steak for 20 minutes, then slice it as thinly as you can against the grain.

Step 2: Heat two tablespoons of the oil on a large griddle or skillet over medium high heat.

Step 3: Cook the onions and peppers for 8 minutes, until soft and beginning to caramelize, then push them to one side.

Step 4: Add the remaining oil and spread the sliced steak in the cleared space.

Step 5: Sear for 2 minutes without moving it, then chop and toss it together with the vegetables using two spatulas.

Step 6: Season with the salt and pepper and divide the mixture into four piles.

Step 7: Lay the cheese over each pile, cover the pan for 1 minute to melt, then scoop each portion into a split length of bread.

Chef's Tip: Firm the steak in the freezer for twenty minutes before slicing and you can get it paper thin with an ordinary knife. Cook the onions and peppers first, push them to one side of the griddle, then sear the meat in the space you cleared so nothing steams. Lay the cheese directly on the hot meat and cover the pan for a minute to melt it.
