Brownie Ice Cream Sandwiches

Celebrate National Ice Cream Sandwich Day with homemade fudgy brownies stuffed with creamy Ben & Jerry's ice cream.

Ingredients

  • 1 box Betty Crocker Family Size Brownie Mix (On Sale: 2/$5)

  • 1 pint Ben & Jerry's Ice Cream (On Sale: $4.99)

  • 2 eggs

  • 1/3 cup vegetable oil

  • 2 tbsp water

  • Sprinkles, optional

Directions

Step 1: Bake brownies in a sheet pan according to package directions using eggs, oil, and water; let cool completely.

Step 2: Cut brownies into 8 equal squares.

Step 3: Soften ice cream slightly, then spread a scoop between two brownie squares to form a sandwich.

Step 4: Roll edges in sprinkles if desired and freeze at least 1 hour before serving.

Chef's Tip: Freeze the assembled sandwiches for at least an hour before serving so they hold together when sliced.

Save by using One box of brownie mix and one pint of ice cream make enough sandwiches for the whole family, with leftovers for later. and Serve with A drizzle of chocolate syrup and sprinkles..
