A playful frozen dessert layering fresh peaches and raspberries with creamy gelato between cookies, made to celebrate Ice Cream Sandwich Day.

Ingredients

  • 1 lb Tree Ripe Peaches, sliced (On Sale: $2.99 lb)

  • 6 oz Red Ripe Raspberries (On Sale: $2.99)

  • 1 pint Talenti Gelato, softened (On Sale: $4.99)

  • 8 graham crackers or cookies

  • 1 tbsp honey

Directions

Step 1: Spread softened gelato onto four graham crackers or cookies.

Step 2: Top with sliced peaches and raspberries, then sandwich with remaining crackers.

Step 3: Wrap and freeze 1 hour to firm up.

Step 4: Drizzle with honey and serve to celebrate Ice Cream Sandwich Day.

Chef's Tip: Let the gelato soften just slightly for easier spreading, then refreeze quickly so it doesn't melt.
