A fall-off-the-fork beef roast simmered low and slow with sweet Vidalia onions and tender potatoes for an easy, budget-friendly Sunday dinner.
2.5 lb Beef Rump or Bottom Round Roast (On Sale: $6.99 lb)
1 bag (3 lb) Vidalia Onions, quartered (On Sale: $2.99)
1.5 lb Yellow Potatoes (from 5 lb bag), halved (On Sale: $2.99)
2 carrots, cut into chunks
1 cup beef broth
2 cloves garlic, minced
1 tbsp Worcestershire sauce
salt and pepper to taste
Step 1: Season roast with salt and pepper, then sear on all sides in a hot skillet.
Step 2: Place onions, potatoes, and carrots in the slow cooker and set the roast on top.
Step 3: Pour in beef broth, garlic, and Worcestershire sauce.
Step 4: Cover and cook on low for 8 hours, until the roast shreds easily with a fork.
Step 5: Rest 10 minutes, then slice or shred and serve with the vegetables and pan juices.
