1.5 lb Picked Ripe Peaches and Nectarines, sliced (On Sale: $2.99 lb)
1/4 cup Gold Medal Flour for dusting (On Sale: $4.49)
6 tbsp Bowl & Basket Butter, cold and cubed (On Sale: $2.99)
1 1/4 cups all-purpose flour
1/3 cup sugar, plus extra for sprinkling
1 tbsp cornstarch
1 egg, beaten for brushing
Step 1: Make dough: Combine 1 1/4 cups flour, 1 tbsp sugar, and 1/2 tsp salt. Cut in cold butter until mixture resembles coarse crumbs. Add 3-4 tbsp ice water and form into a disk. Wrap and chill 30 minutes.
Step 2: Preheat oven to 400°F. Line a baking sheet with parchment.
Step 3: Toss sliced fruit with 1/3 cup sugar and cornstarch.
Step 4: Roll dough into a 12-inch circle on floured surface. Transfer to baking sheet.
Step 5: Arrange fruit in center, leaving 2-inch border. Fold edges over fruit, pleating as you go.
Step 6: Brush crust with beaten egg and sprinkle with sugar.
Step 7: Bake 35-40 minutes until crust is golden and fruit is bubbling. Cool 10 minutes before serving.
