8 oz Berks Bologna, diced (On Sale: $4.49 lb)
2 pkgs Ben's Ready Rice (On Sale: 2/$5)
2 cups frozen mixed vegetables
3 eggs, beaten
3 tbsp soy sauce
2 tbsp vegetable oil
1 tsp sesame oil
2 green onions, sliced
Step 1: Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat.
Step 2: Add diced bologna and cook until edges are crispy, about 4 minutes. Remove and set aside.
Step 3: Add remaining oil to skillet. Pour in beaten eggs and scramble until just cooked. Remove and set aside.
Step 4: Add frozen vegetables to skillet and stir-fry 3-4 minutes until heated through.
Step 5: Prepare ready rice according to package and add to skillet with vegetables.
Step 6: Return bologna and eggs to skillet. Add soy sauce and sesame oil. Toss everything together.
Step 7: Cook 2-3 minutes, stirring constantly, until everything is hot and well combined.
Step 8: Garnish with sliced green onions and serve immediately.
Chef's Tip: Day-old rice works best for fried rice. Fresh rice can become mushy. Bologna crisps up nicely when diced and fried.
