4 lean pork loin chops
1 orange, squeezed and then quartered
1/2 tsp salt
1/2 tsp garlic powder
2 tsp ground ginger
1/2 cup dairy sour cream
Trim fat from chops and place in oblong microproof baking dish. Pour the squeezed orange juice over. Cover with waxed paper; cook on 70 (roast) 12 minutes. Meanwhile, mix spices.
Turn chops over, sprinkle with spices. Place orange quarter on top of each chop and press down to release the orange zest. Cook covered, on High (maximum power) 10 minutes.
Top each chop with spoonful of sour cream and let stand, covered, 5 minutes before serving.

1 boneless beef top sirloin steak, cut 1 inch thick
1 tbsp fresh ginger
1 tbsp soy sauce
1 clove garlic, minced
1/8 tsp ground red pepper
1 boil-in-bag enriched pre-cooked natural long-grain rice
1 green onion, thinly sliced
2 tbsp slivered almonds, toasted
Combine ginger, soy sauce, garlic and red pepper; reserve 1 teaspoon. Rub half of remaining mixture over each side of boneless beef top sirloin steak.
Place steak on rack in broiler pan 3 to 4 inches from heat. Broil 15 to 17 minutes to desired degree of doneness (rare or medium), turning once.
Meanwhile, prepare boil-in-bag rice according to package directions. Gently toss cooked rice, reserved soy sauce mixture, green onion and toasted almonds.
Slice steak across the grain into thin slices. Serve with seasoned rice.

1-1/2 lbs ground turkey
1 pkg frozen spinach, thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese
1 block cream cheese
ground cumin to taste
Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350°F.
Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

1-1/2 lbs haddock, cut into 4 pieces
1 sleeve Ritz crackers
1/2 cup oil
1/2 cup butter
1/4 tsp garlic powder
1/4 cup Parmesan cheese
Place haddock in greased pan. Melt butter and mix with oil.
Add crumbs and mix well. Add cheese and garlic. Spoon over fish. Bake at 350°F for 25 to 30 minutes.
