1 lb bluefish
2 tbsp olive oil
2 cloves garlic, crushed
1 tbsp soy sauce
1/3 cup ketchup
2 tsp orange juice
1/8 tsp dried oregano
2 tbsp chopped scallions
Preheat broiler. Place bluefish skin-side down on well-greased broiler rack. Combine olive oil, garlic, scallions, soy sauce, ketchup, orange juice and oregano and spoon over fish.
Broil so fish is 2 inches from heat about 8 minutes, or until fish flakes easily.
Save by using Tropicana Orange Juice and Serve with Asparagus.
